Pozole De Jai Ba (Crab And Hominy Soup)

  • 1 can (29oz) Mexican style hominy
  • 1 Ancho chile
  • 3 guajillo chile
  • 1 quart shrimp broth
  • 3 cloves garlic
  • ⅓ teaspoon ground cumin
  • ⅓ teaspoon ground cloves
  • 1 Tablespoon canola oil
  • 2 cup diced white onion
  • 1 tablespoon of kosher salt
  • 1 teaspoon dried oregano
  • 1 lb crabmeat

Garnish

  • ½ white onion cut into ¼ dices
  • 2 tablespoon dried oregano
  • 3 radishes slices
  • ¼ head green cabbage juliened
  • 1 lime, thinly sliced

Toast ancho and guajillo chiles 2-3 min. Removed the stems and seeds and sbumerge in a bowl of hot water for 30 mins. Puree with a cup of broth and transfer to blender with garlic, cumin, cloves puree until smooth.

Add oil to soup pot ad onion, salt and saute for 4-5 mins. Rub oregano in your hand and put into pot and add more broth and simmer for 2 mins.

Add hominy after rinsing and simmer for 20-30 mins. Divide crab meat into 6 bowels, spoon soup in each bowl. Serve with garnish.
